THE STORY:
The diocese vineyard, where the grapes come from for this rare wine, is the oldest in Santorini. The privately owned vineyards of the Silver Estate, called Monsignori, are over 200 years old, plowed with mules and the fruit they give expresses in a unique way the terroir of the island. The sharp acidity, the lemony profile and the wonderful mineral character make it one of the top wines of the island.
FLAVORING CHARACTERISTICS:
On the nose, citrus with an emphasis on lemon, grapefruit and orange peel, followed by notes of peach and pear and at the end come some notes of minerals and tea. In the mouth, complex and balanced with high acidity, mineral elements, and lemony aftertaste.

Shellfish, fish, grilled seafood such as squid, legumes with white sauces, aubergines but also white meats with lemon sauces..
